Best banana muffins ever!

I have a go to recipe for banana muffins that turns out every time. They have just the right amount of banana flavour and are super moist. Since I decided to write this post after I had gone through the process of making them, I only have a picture of the finished product, not the steps all the way through….but the recipe is pretty simple and you can add chocolate chips or walnuts or just leave them plain, and they taste great every time!! There’s also an optional crumb topping, which I have made before. It adds a nice little crunch to the top of the muffins and is a tasty addition!

Banana Muffins

1 ½ cups all purpose flour                             Optional crumb topping:

1 tsp. baking soda                                            1/3 cup brown sugar

1 tsp. baking powder                                      2 tbsp. all purpose flour

½ tsp. salt                                                            1/8 tsp. cinnamon

3 bananas, mashed                                         1 tbsp. butter

¾ cup white sugar

1 egg, slightly beaten

1/3 cup butter, melted

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1 tsp. vanilla

Preheat oven to 375°F. Line muffin pan with paper cups.

Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg. In separate bowl combine bananas, sugar, egg, butter and vanilla.

Add dry ingredients to wet ingredients and mix until just moistened.

For topping: combine brown sugar, flour and cinnamon. Cut in butter and mix until it resembles a coarse meal. Sprinkle on top of muffins.

Bake for 18-20 mins.
